Cucumber Salad
1 medium cucumber 1/2 cup white sugar 1-1/4 cup water 1/2 cup white vinegar finely chopped parsley or dill (fresh is best)
Cut cucumber in thin slices (with or without skin). In a bowl mix the vinegar, water and sugar; set aside for a few minutes, stirring now and then until the sugar dissolves. Add the cucumbers and the parsley (or dill). Chill for two hours before serving.
