Swedish Pancakes Show Segment

Julie learns the tricks for making Swedish Pancakes from Lillian.
Swedish Pancakes By Lillian Lagerkvist

Serves: 2-4 Ingredients: 2 eggs 1 T sugar 1/8 t salt 3/4 cup flour 1-1/2 cup milk (1/2 %)

Directions: Mix first ingredients together until blended, then slowly add the rest of the milk

Use a swedish pan or a skillet. Over medium heat on the stove heat the pan and melt a little butter or margarine. Use about 1/4 cup for each pancake, or to just cover the bottom of the pan. Turn the pan to lightly cover the bottom in a circular motion. In about one minute flip the pancake . After both sides are cooked to a golden brown, remove from pan and then fold neatly on a plate and place in a low oven to keep warm. The pancakes can be served with lingonberries and sprinkled with powdered sugar.

Ingredients for 4-6 people 3 eggs 2 T sugar 1/4 t. salt 1 cup flour 2 cups milk

Ligonberries can be purchased in the Metro Detroit area at Swede Anne's Butik - Scandinavian Imports. Call (248) 814-9000 for more information. Tell them you found it on Senior Focus.
