Chinese Chicken Salad Show Segment

Dressing Ingredients:
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 Tablespoons sugar
- 3 Tablespoons white vinegar
- 1/2 Cup oil
Salad Ingredients:
- 2 cups cooked chicken (shredded or diced) 1 large Chicken Breast
- 1 small head of lettuce (washed and torn)
- Fresh spinach leaves (washed and torn) OPTIONAL
- 2 Tablespoons sesamee seeds, toasted
- 4 green onions, chopped, (whole onion)
- 2 Tablespoons chopped almonds ( toasted) or peanuts
- 1 can Rice Noodles (use about 1/3 to 1/2 of can)
DIRECTIONS: Bring 6 cups of water to boil with 1 Tsp. of salt; add chicken breast to boiling water. Simmer 10 minutes with a cover. Turn off the heat and leave in broth for 20 Minutes. Shred chicken later.
In a Food Processor or Blender combine sugar, salt & pepper, vinegar. Pour in oil in a steady stream until all is added. Allow mixture to become translucent. Either add to salad immediately or keep in a tight fitting jar. DO NOT REFRIGERATE dressing. Shake or mix before serving.
Combine all ingredients for salad except Noodles. Mix thoroughly with dressing. Add Rice Noodles and gently toss again.
Serve over bread sticks, in pita pocket or over fresh fruit.
Makes a wonderful meal or side dish without chicken and adding a little bleu cheese.
